Stainless steel… since we just ordered a first set about two hours ago from Heritage. 😁 Although, I will sear on my cast iron pan.

There is a reason for it. Cast iron takes longer to heat, and holds heat longer, is more evenly distributed, etc.

Umm...no debate. Well seasoned old cast iron from a antique store. A brand new one needs some love before it reaches its peak.
Both. Depends on the dish or the application. Cast iron can do things Steel cannot and vice versa.

Cast Iron. Only pans I own. I do plan to give carbon steel a whirl, though.
They both suck. Cast iron is too much of a hassle to maintain, and stainless steel gets stained quickly and steak is tasteless when cooked in it.
stainless steel vs. cast iron doesn't have anything to do with the taste of the steak
