 Some people use butter on the bread, some people use olive oil on the bread, and some people use mayonnaise on the bread. They're using all three as an oil or fat to brown the bread and stop the bread from burning. 
 Interesting. Never knew that’s a thing. I don’t even know what happens to mayo when heated. 😂 
 Melts and liquefies 
 Going off the theme here, *but* slather some mayo on chicken and toss it in some seasoned panko or regular breadcrumbs and bake it for super moist "fried" chicken without the mess. 
 This actually sounds interesting 🤔 using mayo instead of egg. May have to give it a go sometime. 
 My kid loves it. I've started just doing the top so I don't have to fight with a wire rack to keep the bottom from being soggy. The idea came from Pinterest waaayyyyy back in the day and they used crushed potato chips.  
 Not just heated; it’s being used as a medium for frying which is conveniently spreadable on the bread. 
Just heated, mayo is disgusting 😂 
 That’s why I’m in shock. 🤣

To me, Mayo has always been a cold condiment. 

But I guess in this case, there won’t be any Mayo left at the end. 
 Correct. It is a thin swipe that gets absorbed into the bread. 
You’re essentially frying in a mix of oil and egg yolk fats with a little extra flavoring, and it doesn’t run on the rest of the pan to burn there wasted. 
 Damn it. 

I’m making grilled cheese now… with mayo.
