Every time I’ve tried to intermittent fast, I end up with a headache that lasts the rest of the day. I hate it.
Check out a book called The Fatburn Fix. That happens because your body is not in a state where it can burn its own body fat for fuel. You can adjust your diet slowly over time and get to a point where you can.
Does this require me to eliminate carbs from my diet?
No. It's focused on eliminating unhealthy fats and oils from your diet and increasing the amount of nutritionally dense food you eat. Doing that will naturally reduce the amount of carbs you want to eat. That strategy tends to lean towards the keto/carnivore diet, but that's just the extreme end.
I haven’t eaten anything processed in about 2 years. My only fats are whatever is on my beef or grassfed butter. My only carbs are fruit, honey, and maybe rice once a week. I recently did a food sensitivity test and found that I’m sensitive to dairy and eggs so I’m trying an elimination diet.

Try drinking more water. Something is getting out of balance for you. Perhaps start smaller if you're going all out in the beginning. Start with maybe a 8 hour waking fast. Slowly work toward longer amounts. Do not fuck around, be disciplined and educated. Fasting is good, but YOLOing into it is a fools game.
Electrolyte water, coconut water, and beef broth are great to have while fasting. You have to keep your salt levels up.

It’s confusing as fuck though haha Dr. Berg on YouTube says that drinking tons of water will actually dehydrate you more because you need electrolytes to retain the water. His recommendation is to just to drink when thirsty. Idk what to do lmao
What @[ARCHIVED] Jay said. Electrolyte water. Goal of fasting is what? Re-Acclimate your insulin resistance and stabilize metabolism. So low sugar electrolyte solutions, will help. BTW. Don't just think it's ONLY water. Perhaps when you fast you don't drink coffee and therfore end up with a caffeine headache
