Definitely best to wit for official releases. Alby Hub is currently in Alpha testing and is expected to have bugs.

Jellyfin has apps for just about every platform, including smart TVs. It's also very easy to create guest accounts to share media, etc. I've never used Plex personally, so I can't compare, but I'm pretty sure Jellyfin does all the things and easily.
What do you mean by local emails? You mean running your own SMTP server? That is very difficult to do in a way that will actually result in emails being received to inboxes. Email is largely a captured protocol, and it is no longer feasible to run your own SMTP server and expect clients to permit emails from that server. We plan to offer Mail In a Box at some point, but it will probably only work for certain use cases. Meaning, many people will not receive the emails you send them.
The newer 7B models like Llama3 or Mistrel work great on well-resourced devices like the ones we sell.
No real harm in running it alongside Bitcoin and Lightning, but you also don't have to. It's your server, only install what you want.

Most likely this is an issue with the graphics driver. Which ISO did you flash? Many screens will need the "nonfree" ISO to work properly.
May I ask why do you have screen connected? Except for flashing firmware and extremely rare debugging purposes, there is absolutely no reason to connect a monitor. servers are meant to run headless (mno screen/monitor).

A relay only knows what it learns from clients. Relays do not talk to eachother like they do it Bitcoin.
You can't just spin up a relay and expect it to know anything.
What do you mean "broadcast everything manually"? When you create a note, it automatically gets broadcast to all your connected relays, at least the ones that permit writing.

I see. Yeah, the difference is that Tor has decent support from client browsers/applications, where as i2p does not. For example, it won't matter if your LND grpc interface is available over i2p because no wallets would support connecting to it.

Yes, LND is something you can install on StartOS. But the whole point of StartOS is to automate the syadmin skills that prevent people from running servers and nodes. Everything you just described to him is just a button when you run LND on StartOS.
This is not possible until 0.3.6, because CLN on StartOS does not have a port on the LAN. All hostname resultion is done using HTTPS and SNI. 0.3.6 gives services a unique port, so you will be able to use a VPN or even set up a clearnet domain. So only Tor for now.
Yes, email is also particularly captured and generally required using one of the big SMTP servers if you want any hope of your emails reaching inboxes.
