Cooked up a small peice of Chuck Crest (brahman hump) today. https://i.nostr.build/6EObaV5zQAZkfXBX.jpg https://i.nostr.build/Zy2rHRdZlhKpmjeZ.jpg Low & slow along with some pork shoulder. Very tasty, juicy & tender, similar to brisket. I should have cut it all against the grain. https://i.nostr.build/cp27sH5DOMWMZnKT.jpg

Looks delicious. Low & slow on a bbq? Or a slow cooker?
Yeah kamado BBQ - charcoal fueled with temps stabilised by the thermal mass & controlled airflow. 120⁰C for about 7hrs
Nice. Grew up using charcoal bbq in UK. Aus much more into gas generally 👏👏
I bought my Kamado Joe when I went carnivore. Best BBQ I've ever owned although it probably cost the equivalent of 20 million sats at the time 🤣 I have a couple of little portable Weber charcoal grills for traveling that were much cheaper. I love the taste & love that I can always cook with the energy stored in wood. No reliance on gas. 80% of the charcoal I use, I make myself.
