My guess is that the stats are accurate and you underestimate how much time you spend in these apps.
That's at least how it was for me when I started looking.
I assume whatever app is foregrounded is counted as active use if the screen is unlocked, so if your habit includes writing someone back and putting your phone on the counter unlocked it will probably count (until your device auto-locks). That might explain some extra time.
