Chana Madra - Chickpeas in a Spicy Yoghurt Sauce

Himachal Pradesh, a state in the North of India have some delicious vegetarian dishes despite being non-vegetarian over all. This is a dish that is very common, especially at festival time. Chickpeas are simmered in a beautiful sauce of yoghurt and warming spices.

 So many interesting convos going on about an (alleged) American habit of not buttering bread (and perhaps using mayo instead but I assume not on sweet sandwiches). @6adf5d3d opened pandora's box with her comment on some sandwich observations in the US. I think I have learnt more than I wanted to know about US sandwich habits.

And just for the record, here we routinely butter bread, even if it contains, as part of a filling, mayo, avocado or hummus. It may differ between individuals but in general, butter is a thing. #Straya 
 Today or tomorrow there will be congee! Cooked in the Chinese clay pot which makes such a difference to the taste. I have quite a few congee recipes but will be making the one from #Tenderheart by #HettyMcKinnon - Ginger jook with frizzled ginger and garlic. 😋

 Recently I did a stock-take of the herbs in the garden. Even I was surprised to find that I am growing 45 different herbs that can be used in cooking and/or tisanes.

UPDATED with Lamb's Ears - TIL it has medicinal qualities + teas.

tulsi, brahmi, curry  leaves, dodapatre,
fennel,
sweet basil, opal basil, Thai basil,
oregano, Greek oregano, marjoram,
thyme, sage, tarragon
bay leaf, makrut lime leaf, lime leaf, cumquat leaf, mandarin leaves, lemon leaves,
coriander leaves, flat leaf parsley, curly leaf parsley, lovage, celeriac leaves,
lemon verbena, sweet mace, rosemary,
chives, flat leaf chives,
chilli leaves, chillies,
borage, yarrow, comfrey, calamint, lavender, nasturtium,
lemongrass, rose geranium,
mint, Vietnamese mint, Thai mint,
horseradish
lamb's ears

There are others that you could count like fenugreek leaves and moringa leaves, but I use them more as vegetables.
