 Recently I did a stock-take of the herbs in the garden. Even I was surprised to find that I am growing 45 different herbs that can be used in cooking and/or tisanes.

UPDATED with Lamb's Ears - TIL it has medicinal qualities + teas.

tulsi, brahmi, curry  leaves, dodapatre,
fennel,
sweet basil, opal basil, Thai basil,
oregano, Greek oregano, marjoram,
thyme, sage, tarragon
bay leaf, makrut lime leaf, lime leaf, cumquat leaf, mandarin leaves, lemon leaves,
coriander leaves, flat leaf parsley, curly leaf parsley, lovage, celeriac leaves,
lemon verbena, sweet mace, rosemary,
chives, flat leaf chives,
chilli leaves, chillies,
borage, yarrow, comfrey, calamint, lavender, nasturtium,
lemongrass, rose geranium,
mint, Vietnamese mint, Thai mint,
horseradish
lamb's ears

There are others that you could count like fenugreek leaves and moringa leaves, but I use them more as vegetables.

There could be more. Out of interest, I'll add to the list as I recall them.
