 Definitely missing a paring knife. How do you cut up oranges and apples? Also, a boning knife. Bones are for soup.

 I'd be wanting a scimitar style butchers knife for cutting large slabs of meat into steaks.

A lot of those look to be for fine work (eg sushi) or chopping. Beautiful knives. 

 some sorta slicer or thin knife with less surface area.

also - a good bread knife (even if you don’t eat bread.) 

 That is one amazing Japanese knife collection.  Which one is your your favourite and used the most? 

 I use the Santoku every day, but I love the curved cleaver on the top left. It’s the one I reach for when we buy bulk meat.
