I'd be wanting a scimitar style butchers knife for cutting large slabs of meat into steaks.

A lot of those look to be for fine work (eg sushi) or chopping. Beautiful knives. 

 some sorta slicer or thin knife with less surface area.

also - a good bread knife (even if you don’t eat bread.)
