 @Kaboom would also be cool to have a small selection of bitters/amaro, you might attract some booze snobs in a “dive” setting.

If you’ve never been, check out Amor y Amargo in Alphabet City.  They have a huge selection in a hole-in-the-wall space.

 Ohhh yeah.

Braulio is our baseline, Sibilia contributes to a killer espresso martini, averna and veccio for the light side style, novalis for darkside style, ramazzoti spagliatos instead of jack and coke, del erboista for the discerning pleb. How about some barolo chinato - new whale cocktail potential there?
