Only because I feel if the bar isn't really obvious, if I walk in as a new person I'll be confused about where to go.
I prefer coffee bar first, because of customers who buy a coffee to go, so the seating area should also be quieter - just my opinion

Both works. A is better for staff, —to not cross path with costumers that way often—, however it segregates the costumer's area layout. B has the costumer area nice and tidy, it will benefit whatever decoration and the overall experience of the place, however staff has less work-space, they would have to walk more; and also there could happen crowding at the entrance, —which I'm guessing is also the main exit—. I would choose B by asking the chance to detail more the bar area and the working process of the staff... If choosing A, then to ask for other chances of costumer layouts. 🤙
Off the cuff option b. Those seated won’t be as disturbed by walking and weather every time the door opens.
Option A is my pick - isn’t as crowded and the employees can keep an eye on entire store including the WC and possible outside customers. I agree with fellow Nostrs that less people want to sit next to the door - is it possible to add a 2nd door if you live near in the cold? Biggest problem with option B is zero space for a customer line, I can’t see where the employee would get into the work space, and I’m guessing the machines would prevent any way to view the customers from the work area.
I'm leaning more towards A. Having the coffee bar that close to the entrance could become too cramped if you have a lot of customers.
I agree, having everyone lined up in the front will cramp and when i worked at a bakery they had to walk by fridges or shelves before they reached the register
Option A stops a jam from happening with the coffee line and people walking in.
A is more welcoming and lets people spread out; B will promote congestion right by the door.

I am leaning towards customers comfort, so I will mostly go for Option B. Depends on what you’re going for. If location is a busy around town then option B. If it’s in slow sleepy area then A.

Option A, seating first offers more window space/natural light to the customer; however if there is a long line/queue then the congestion could spill out into the seating area, making the seated customers uncomfortable--but also creating a higher seat turnover rate. Option B, coffee bar first encourages the line/queue outdoors, providing free advertising for the coffee shop: i.e. "this coffee is good", but moves the customers away from the natural light and more comfortable dine-in experience. In the end, I think it depends on the location of the shop. Is there another coffee shop in the area? If so, maybe offer the opposite layout that they offer. If it's mostly a rush-hour/lunch urban clientele, then maybe Option B up-front is good. But if it's a bad weather type town, then maybe Option A is better so more customers can queue up under shelter. Personally I prefer Option A though. More time to peruse the menu and people-watch as you make your way to the order station.
