 The balance is that utility companies are an obvious place where people can't imagine living without and would pay sats but there is a little coersion there. Basic human needs aside, it sounds like you would spend sats on privacy. 
 
 I value my privacy yes. 

I'll also spend Bitcoin directly with Bitcoiners (ie people who value it as much as me). I'm in no rush to spend my non KYC Bitcoin with a company who'll immediately cash it into fiat. I may as well just use cash. 

Things I've bought: eggs, honey, t-shirts, hats, seed signer, stickers, jerky, fresh fruit 

They're generally lower cost, consumable items.

What limits me spending is the number of people offering to sell me something of value. We've been encouraging the circular economy in our local groups & so this is shifting. 
 Currently it seems that novelty has a market share of spends. 
Local food economies seem like a natural product fit. 
But I guess the question is what ordinary businesses flourish during the fiat to bitcoin transition and which disapear?  
 I'll be definitely be getting some cattle.

Bitcoiners need their meat.
