It's easy to understand. Plants have defense chemicals built in, are not generally nutrient dense and the good stuff isn't as bioavailable as you might think. Animal meat is the opposite.
I was speaking in regard to ultra-processed foods. I understand the phytochemical issure. Some are sentive and cooking for fermentation helps tremendously. Nutrient content had much to do with growth method. Industrial NPK and pesticide/herbicide grown vegitation obviously had issues that organic compost produce does not.
