 “Super easy” is contextual. I have installed GrapheneOS, and I’ll agree that for a technical person, the installation is well documented. Following the step-by-step instructions will yield a successful install.

BUT, I would not all this “super easy” for Joe Sixpack. You have to put your Pixel in dev mode and experience several scary looking reboots and warnings. It doesn’t “just work” in the same way that an iPhone does.
