 Been carnivore for a couple plus years now and it's so interesting that when I initially began on strict carnivore I stated to have this visceral feeling of "Wow, I feel like I am super fertile right now".

 You should eat organs too. Muscle meat alone doesn’t have all the vitamins and nutrients that you need.

I personally follow Paul Saladino’s diet: meat, organs, fruit, honey, and dairy. Some Bitcoiners don’t like that diet and stress that pure carnivore is the only way. You should try and see what works for you. Definitely cut out seed oils and refined sugar. 
 I don't have that much organs in my diet the last few months but the last couple of years have had quite a bit. I literally ate several dozen pounds of tongue and heart in 2022, some hunter friends gisted me deer liver, and last year in eastern Europe I'd buy pounds right of the butcher within the hour while the cow was still getting processed and ate at least 4 full on all the organs including brain, kidneys, and he even gifted me some testicles I finally got to try. 😘

Been having some blueberries and a few strawberries from the garden I am tending the last couple weeks. But I don't that great with carbs. Been on and off dairy and continuing to cycle it in and experiment. 

I do love to do high grade manuka honey facials though 😋 
 As a biochemist I like the approach of Paul but would add some tubers for more carbs. I would avoid pure carnivore as low carb over a long period leads to physiological insulin resistance and suppresses the thyroid (which is why organs like brain and thyroid NEED to be eaten when going carnivore). Another issue would be too much iron and Neu5Gc when you eat mostly red meat.  
 You think tubers will help with digestion?

 Yes, especially because of resistant starch.

To put it simple: with constant fat burning mode your body unlearns carbohydrate burning. That's why people after a long low carb diet say they dont feel well on carbs. It's your own fault. There are endless of studies for that effect. If you lived low carb for a longer time you need to add carbs slowly.  
 Interesting. So your body is always adapting to what is available. How do carbs influence hydration? I think that’s the tricky part for me because I’ve heard insulin spikes affect your electrolyte balance. 
 Glucose helps transport sodium and potassium molecules into cells. 

Btw, a common misconception is carbs = insulin (and insulin = bad). Proteins are insulogenic too, often even with a higher insulin response. Whey for example is VERY insulinogenic but still promotes fat loss.  
 So how do you know how much carbs you should eat? Carbs like fruit don’t seem to have the same satiety signals as fat/protein. 

And I know about protein causing insulin spikes too. They are smaller spikes but I still find it funny that the reasoning against carbs is based on insulin. 
 It's not that easy to answer as it comes down to genetics. Africans for example would need more carbs than northern europeans. However, at least 150-200g should be the minimum for everyone. A good start would be a 33:33:33 approach — one third carbs, one third protein, one third fat. From there you can individually test if your body prefers more fat or more carbs. (That is, however, when you dont have insulin resistance which tricks your body in prefering fat.)  
 What kind of signs would you look for? headaches, fatigue, diarrhea? What would you do in response to those? 
 Carnivore is NOT only meat. You do also want to have a good source of animal fats in your diet. 
There are various ways one can choose to do this diet that is more strict or less.
Animal based is normally eating food that comes from animals. So that would include milk and butter and eggs, for some cheese and some people like Paul Saladino consider honey 🍯 carnivore. He used to be strict now he eats quite a bit of fruit.
I continue to go back and forth experimenting different versions and do a bit of what's called "dirty" carnivore... As I indulge in my bullet proof coffee in the morning and sometime veer off with a treat here and there. 
But yes, mainly steak and butter baby. Though, losing my part time gig month and a half ago has shifted my budget and doing a lot more ground meat products like venison, beef, bison and elk atm.
