 I assume you are talking about a Bitcoin On-chain node ?
Can you also run a lightning node at the same time ? And NOSTR relay ?

I'm planning on getting a Raspberry 5 (8g ram) to run my node.

 Yes correct. You can do all these things and much more with a RaspiBlitz node

Very easy to do.
Summary
1) get all hardware (pi, SD card, 2TB SSD, etc.)
2) download balena etcher (to flash SD card)
3) download the lastest raspiblitz release
4) flash raspiblitz release to SD card via the etcher program 
5) plug everything in to raspberry pi
6) turn on
7) go through setup & IBD
