 @87e0b6e2
when is it a bad day to start fermenting stuff?
 @d8402a8b

It's never really bad, but my feeling is that too warm temperatures make the cider taste bad.

So our fall is good, garage will stay between 50 and 60 (10 -15C) for fermenting, and a bit cooler for aging.
 @87e0b6e2 @d8402a8b if your temperature isn't constant, you get fusel alcohols which taste bad.

Fusel doesn't sound good!

I am trying to keep around 15C, after it gets started.
 @87e0b6e2 @d8402a8b they aren't that bad for you, they just taste like shit. https://en.m.wikipedia.org/wiki/Fusel_alcohol
 @60d98082 @87e0b6e2 never experienced that with cider...
 @d8402a8b @87e0b6e2 standard brew lore. Try and keep the temperature constant and it'll give you a better tasting brew.
 @60d98082 @87e0b6e2 i break all lore
 @d8402a8b @87e0b6e2 you do you brother, if you're happy with how it turns out then that's all that matters.
 @87e0b6e2 we don't even get that in winter!
