 You can safely ferment whatever plant matter you want.   
Don’t try protein (eggs,meat) but any vegetation id pretty much just kimchi
I also make my own yogurt and keifer.

 Yes capped. Less air is better. Avoids molds and yeast from growing on the top.
You can scoop it off and its fine though
