Does Umbrel recognise multiple drives?
As far as I know it doesn't but you can mount a drive and extend the volume.
If you hardware have the requirements, try Proxmox or TrueNAS scale.
Why? Setup another lab for those things? There is already separation in start9. Also, you could just load multiple startos VMs on proxmox if you insist on having separate boxes
