Organic mayo if I have one open, which is super rare. Otherwise butter. 
BUT
I recently discovered frying bread in sausage grease is AWESOME and I bet it would beat all other options 
Will try someday 

 A good knob of bacon grease with a light butter float, with mayo on the bread.
