 She says she would ‘prefer’, which is not the same as ‘only accept’. Just say you have btc and will not assume cost for the conversion to usdt. If she wants to convert it point her to Kraken or something.

 Seems like a good use case for Aqua Wallet, maybe? It supports on chain Bitcoin, lightning, liquid, and USDT. I haven’t personally tried the USDT swaps but everything is baked into the app to make it streamlined. 
 Apparently too, it swaps out the usdt from that blockchain and it use the liquid usd version instead @Blockstream might know better how Aqua does it.

 There is also the speed wallet, USDT (over lightning new feature) or USDT over Ethereum 
 If she wants usdt she might be living in a place that needs the short term “stability” so in that case I’d use something like people mention, aqua or blink wallet. 

If she uses something like binance or kraken, they can receive and sell bitcoin to usdt right on the spot (I’ve a friend that lives in Venezuela and for stuff like this is what I do) but I use strike. It will also send fiat through lightning so I don’t have to bother with exchanges rates. 
 Say “sorry I only have bitcoin, but you can convert it to virtual dollars on aqua or blink wallets.” 
 Charge her a fee for using a different currency. 5-10%

 Get some usdt or choose someone else that takes bitcoin if it’s a hassle for you. Pushing people to bitcoin seems to have the opposite effect. Offering is all you can do. And then offer again next time. 
 If she accepts sats or btc, say you'll pay 10-20% more. It sadly does give the impression though that you're just trying to offload and the nature of bitcoin volatility probably is what scares them. 

Otherwise make them use a non-kyc exchange for quick swapping or something I guess.
