I'm trying to improve my seed germination rates, and these are the herbs what Google tells me do best with cold stratification. @b1f5b2b4 I have sown seed for a number of the plants you have highlighted, and I didn't stratify them specifically. I just sowed them and left them in the glasshouse to germinate. Our night time temperatures are still down around 2 - 3 if we don't have a frost, and most have germinated. But it's not a big thing just to throw them in the fridge for a week or two. If I don't stratify, I just sow extra seed to make up for it.
