Make Fries Tallow Again
I want to at my restaurants, but tallow is 3x-4x the bad stuff.
Advertise is. Raise prices. People will buy them. People will contribute to non-stupidity at this point.
Could you do both and have both on the menu at their different price points? Or would it be impossible because of how many fryers you have?
I have 2 fryers so I'm thinking about trying it. I also have concerns, being in a very blue state, that I will get ostracized.
I wish you the best. My family is getting off of seed oils, and where we live that basically means can't eat at restaurants. If we do on rare occasion, we don't get anything fried.

Absolutely. Go look up Malcolm Gladwell’s podcast on this. Worth your time. Mc D’s fries used to be fried in tallow. Ask anybody old and they will tell you when the taste changed.

Earlier this week, I made some sweet potato fries fried in wagyu beef tallow with sea salt and ceylon cinnamon. It was really good.
