Alright youve got a massive quarter of beef, frozen. Now you want to cut some off to cook this week. How do you do that? Or do you thaw the whole thing once, butcher it all down and then re-freeze the portions?
When you buy a 1/2 or 1/4 of a beef, it is with the understanding that it will be processed into the cuts you want at a butcher shop. Picking it up as a whole piece is possible, but any butcher will ask appropriate questions to make sure you are not getting yourself into more work than you anticipate.

I know! Just being silly. I gave up on paleo and eat mostly veggies and meat but also rice, breads, beans. I figure I exercise enough to keep the carbs from wrecking me and it’s cheaper.
ive experienced the same when attempting to eat local farm goods only. the premium between it and grocery store shit has gotten wider in the past 5 years, empirically and anecdotally to me. and that is on top of the price floor for all food rising!

I try to buy as much locally as I can (lots of good options here, especially in summer). Typically more expensive that way but it feels better
