... but dry aged prime beef yields the best steaks.

This place, out in the middle of nowhere off of I-10 east of El Paso, was great back in the 70s and 80s... probably still is.

They used to dry age their meat for several weeks.

My mouth is watering.

Thousands of thousands of years without electric refrigeration.  Aged and fermented food is far more normal than canned or frozen, from an historical perspective at least
