Cover them with a blanket / water them very good, like the leaves, the water can protect them if its on the edge. Also its more a feel you will know more for next year 

 I’m in zone 4b.  I Thank you for the tips.  I didn’t want to potentially lose all the peppers so I picked them all and hopefully they will ripen more! 😊
