There has been a lot of hype around @barnminer homemade beef jerky. When he presented me with an opportunity to get a few packs, I didn't pass it up. I have to say, it's hard to open a package and not eat it all in one sitting. Another example of those participating in Bitcoin producing high quality, exceptional products, worth every sat. In this case, barn wanted maple syrup instead of sats, so he found a way to preorder some even though I'm not offering it yet.

I am a bit bummed I could never buy any jerky even one that looks super high quality.  It seems like the makers always put some spices and sauces on it that my body can't process. Wish there was one super simple  just with salt for us AIP (Autoimmune Paleo) carnivores.  
 Have you tried making some? I used to make it with a  counter dehydrator. You can ask the butcher to slice the beef at the desired thickness depending on how you like it.  
 ooooh, no I haven't tried that or thought of it. I think I'll need some further guidance but definitely down to make it when I settle down back to having a home and aquire a dehydrator. I totally digging the prep movement and this would be the go to one for me. 

What thickness do you like yours at? I am def not a jerky connoisseur for the fact I've been limited in eating it due to the spices.  
 In that case, you could start by getting a big cut of beef and trying different thickness to see what you like, I'm pretty sure you can dehydrate with the oven to start. Of course, if you want a dehydrator I have to recommend a Bitcoin mining dehydrator but that is hard to find.

A couple of years ago some friends freeze dried  beef heart and other organs and meat... Volume goes way down but supposedly still fully nutritionally packed. I was all over it. It was a super delicious treat. 

So all this and preserving meat been on my mind since then.

 Same here. I have issues with beef. But have no problems with venison.  
 Venison is great. That's so strange though. Do you have issues with organic grass fed grass finished beef, too? 
 Its definitely better, but I still sometimes have issues. I eat it and 30 min. Diarrhea. Pork sometimes does this too. All other meats seem fine.  It seems related to the fat content.. The more the worse. 
 I am sorry to hear that. As a carnivore I find this to be such a bummer... love me my red meat. 

It's an interesting indicator that you do slightly better with higher quality meat. I find it to be crucial for so many reasons. 

Intuitively it seems to me like your liver may potentially be needing decongestion. Have you ever done a liver/gallbladder flush? 

So many nasty contributors nowadays to overwhelming and making the liver sluggish...
