 That is jerky.  Biltong is not thin and it doesn't go in a dehydrator.   I am sure it is great but it isn't biltong.  Jerky is dried, biltong is cured.

 Jerky is heated to 165, biltong is air dried

 I tried Anton's biltong. Will be getting much more. Amazing is an understatement
