Or just don't use Google's OS. Something tells me #GrapheneOS isn't going to let this stand.

At least we can install alternative software. Having an Apple device pretty much just leaves you with whatever Apple tosses at you as far as I can tell. 

 Can you only install alternative OS on Pixels? Or any Samsung device? 

 You can install alternative OS in every Android phone. You can (pretty much) only install GrapheneOS on Pixels.
