I’ll never understand the obsession with sauces, marinating and cooking oils. Quality meat contains high concentrations of animal fats which allow it to cook brilliantly and yield phenomenal flavors. Lil salt and I’m a happy minimalist.

No haha I buy the entire slab from the Costco business center. It’s grassfed from New Zealand for like $10 a pound. Amazing deal but cutting and freezing them takes some time.
Ah... got it. I'm fortunate to have a local butcher (with abatois) who sells a half or quarter beef for <$4/pound. I'm quite happy to have that opportunity but would prefer an even more direct stomach-to-cow relationship. I like your retail solution though. Cutting your own probably brings you "closer" to your food, for sure.

Butter salt pepper = awesome steak If you add a little paprika you can get a cool crust on non dry aged steak
