The Goal is to get that shit crispy all over. One of the reasons I like frying with tallow is the subtlety of the taste. Once you make French fries in tallow you never go back. Salt, garlic powder, perfection.
I usually use duck fat for fries. Also great. I’ve never cooked with tallow before. I’d like to try it one day.

They last quite a while. I've kept duck fat in an airtight container and it lasted for several months. It's generally cool where I live so they last a bit longer. I think they'll keep for a long long while when refrigerated or frozen.
