Cheese is really easy, but time consuming. It's a good winter activity. And like everything, homemade is better.

Yeah, cheddar & ricotta, a few times a year because it require a whole day. I'll make other occasionally.

Ricotta is actually a byproduct of making other cheeses. It's extracted from the whey.

I've never done it with the cottage cheese whey since it sits at room temp for so long & I'm a neurotic weirdo... that stuff just goes on the compost. 😅 but if you want to try it, I can snap pix of that recipe too.
