 At 1-1.25g of protein per pound of body weight, you don't have to be that big. I'm 185lbs, so I'm right up there at 200+g per day. 
 Unless you're a literal bodybuilder or high level athlete that's probably too much I think 

I think 1g/kg is good for someone who just works out like 2-3x per week??

 I'd recommend at a minimum 1.75gr of protein per kg of lean body mass, preferabley 2gr. Make sure to acquire it by eating fatty meat. 
 I'm 72kg and probably like ~14% body fat, so I should be eating 130g per day roughly? 
 If you have 14% body fat and weigh 72kg, you can use the following equation to calculate your lean body mass (body weight if you didn't have any fat):

LBM = body weight - (body weight x body fat %)

With your data, the result is 61.92

So you'd should have at leat 109gr of protein a day.  
 Which is around half a kg of rib eye to get 109gr worth of protein.

 Anytime! To be honest, if you're on a carnivore or keto diet, just eat fatty meat until full. There's no need to count calories or grams of anything, your body is perfectly designed to tell you when to stop eating meat. 
 I do CrossFit 6 days a week. Maybe I could get away with less protein, but I'd rather be safe. I put on 10lbs of lean mass in the last year. It's definitely working.
