 After a week of increasing my cardio and increasing my fiber I GAINED weight. I'm pretty sure it's water retention, because it's hot as fuck and my fingers feel swollen, so I don't know if I should just carry on and wait for the weather to cool or if I should change something up.

I think I'm going to switch from fiber capsules to a drink powder so I get enough fiber. I don't want to take 5 fiber pills multiple times per day.

It's just so deflating to work hard and see negative progress.

Yeah, I know the feeling.
I eat once per day. ONCE. And while I did have a great results at first, after I lost 5kgs, out of nowhere, I regained 3 back, and the progression stopped for about 2 weeks. I am somehow back on track now, but it did in fact drive me insane.

Trust the process. There is nothing else you can do except trust the process and track weight/mood religiously. 
 @2e77f263 When you look at yourself in the mirror, do you see any visible changes? Weight on scale can change due to water mention and hormonal shit. Maybe you're overestimating your workout/underestimating what you at. I met too many fates who complain about not being able to lose weight but chug a 12 pack of coke. Not saying that's you just saying

 @2e77f263 Don't give up. Be consistent for at least 3 weeks to rule out water fluctuations. 
 @2e77f263 Fiber will saturate with water in your gut and form a thick sludge or gel, its like oatmeal sucking up water.  slows down sugar absorption too.  There is a natural sugar called Allulose, you can use instead of sugar, and it reduces the glycemic index of all other carbs and sugars you eat, it prevents them from being broken down into smaller sugars and absorbed. 
 @2e77f263 That sucks. Pickle spears are a reliable source of fiber and they are super low carb. Include a pickle spear with your lunches to reduce supplemental fiber dependency.
