 Why is raw honey so much better than store honey? What's in it that isn't in the store honey? Bee spit? pollen? Is the pasteurization that ruins the flavor?

Whatever it is, honeycomb is even better, even though you have to eat a bit of wax with the honey, it's so much for floral and bursting with sunlight and summer wildflowers.

It's probably the extra bee spit and bee dandruff isn't it? 
 @134318c2 I'd assume that honey fraud plays a big role as well. A lot of store honey is diluted with corn syrup or other cheap sweeteners (even when the ingredients just say honey). Raw honey is probably less likely to be diluted out because it tends to come from shorter supply chains.

A friend of mine keeps a small aviary in his yard and the honey is *chef's kiss*
