I also don't see where you're getting Jesus changes His relationship with His mother into that of teacher and disciple (rather than son and mother) out of John 2:3-5.

 I'm not aware of any suggestion that it wasn't a wedding. The claims for Mary's discipleship are deduced from reason more so than scripture (why wouldn't she be? Unlike the others, she knew exactly who and what he was right from the start). As far as the gospels go, Catholics would point to Luke 2:19 ("Mary treasured up all these things and pondered them in her heart") as evidence of Mary viewing Christ as a teacher. This is then brought to bear on John 2:3-5 in a attempt to offer an explanation for the fact that Jesus speaks quite harshly to her and not in the way a son would speak to his mother.
