I've never been to a mass yet where the celebrant leaves the altar during the sign of peace, even the one time I attended the most progressive hippy dippy church in our archdiocese. 
 That's really messed up.

Not necessary anymore since we use mechanically produced hosts, only crumbs come from fraction, and those fall on the patten.

I have used homemade hosts before, and it made me see why that practice was necessary back then. Crumbs everywhere!
