Seed oils require advanced processing techniques that have only been around for a few decades, a mere blip in the timeline of human evolution. Consuming seed oils introduces substances that our bodies are not well-equipped to handle. Additionally, seeds and nuts contain a high concentration of defense chemicals, which is therefore also found in their oils. While avocado and olive oils are generally considered healthier options, they are often blended with lower-quality oils, so it's important to choose high-quality varieties. Furthermore, avocado and olive oils typically include their seeds (such as the pits of olives and avocados), which may not be ideal either. Personally, I prefer using tallow, lard, butter, and ghee for cooking.
I wonder if the adulteration of olive oils depends on where you live? I don't think Italians would stand for it, so I buy good quality Italian EVOO. But bang on about seed oils. I use ghee, coconut and macadamia oil for frying generally..
