 I'm pretty tempted to try #nixos , but fear the rabbit hole it may take me down.

 go for it, the only thing to keep in mind is that you have to forget about FHS and understand how #NixOS installs and uses its packages, after you realize that it looks like you are editing some json file. Try to see some of vimjoyer videos, he has good explanations though.
