 Debian. It's super stable and supported. Use can use distrobox to virtually use any other distro inside it so the complaints that apps are outdated are kinda moot

 Arch linux, you download only what you need. Awesome wiki also.

Downsides is that you have to choose what to download and might have to configure the parts yourself.

 I chose to go with a BSD to give the bitcoin network a little bit more diversity of operating systems.  Bitcoin is likely a heavily Linux leaning install base.  But that might be hard mode with ordinals software.  Don’t know how well they run on non-Linux.
