You're right. Once a note is out there and signed, it can always be attributed to the sender, that's beautiful. But it doesn't make people more truthful. It just means you can't u do a mistake.
You can't say one thing and then later pretend you never said it. That's probably what most people mean? I get that point.
Maybe this can be resolved by pwning your own keys. Think “have I been pwnd” but a site where you “pwn me” which simple lists all know keys and therefore destroys any means of confirming if the owner of the keys was the actual individual. Literally you burn it down and rotate. But it risks previously encrypted information being leaked.

A more aggressive method may even be to spam relays with new events with an event then a delete event for it. It would likely force the relays hand to offload all ‘deleted’ content. But that is a very heavy handed.
If relays want to operate in the eu, long term. The GDPR law will hold them accountable to delete content on request of the npub-owner, or the responsible person/org will be fined heavily by the governments in the union. But yes, even outside that legal framework I still agree with your point.
If you have the nsec to sign something, then you should be able to sign something saying “this previous note is no longer valid”. Is that what you mean by delete?
