What is pemmican?
Pemmican is traditionally made with a 50:50 ratio of dried and pounded (or ground) meat to rendered fat. The meat is usually from bison or deer, and the fat is typically a carotene-rich tallow that is yellow in color. Dried fruit and salt are optional ingredients that can be added for additional flavor.
