Agreed. I also refuse to use Alby because they require an email. That is horrendous for a supposedly open ecosystem.
But is there any wallet service that doesn’t require email? And what if you use an encrypted, secure email? Or email alias?
What is a “wallet service” exactly? I would question that premise. Yeah I could make a throwaway email, but I won’t because it’s very annoying to do so and I don’t think what I am getting in return is worth it.

Our custodial wallet service require an e-mail to log you in to the dashboard and recover your access. However, our extension is open-source and doesn't require any e-mail or data to use Nostr with it. Also, your nsec private ey stays on your machine, Alby doesn't see your actions.
