Why do we cook dry ass turkeys for thanksgiving when we could be making brisket or like 4 chickens

I'm not saying america is right about everything, but sometimes I find out things are "american" and feel bad for the rest of the world. It isn't just for turkey once a year. I can also make beer and sterilize straw for mushroom buckets.
