I think it would go well on pumpkin pie, too.

I would start with a mild cheddar. I'm not sure sharp would go well, but that depends on how the pie is made and how strong the mix is spiced. 

Gosh, now I'm thinking of crumbly pie crust and warm pumpkin pie filling...
