Idk I always viewed Latin American food as a sloppy, chili pepper variation of Mediterranean food.
Fun enough the taco was the result of criollos (spaniards born in the americas not in spain) trying to recreate gyros with local ingredients and the tacos then expanded to the rest of the population, tho it was later when mexico recieved lebanese refugees that they took the shawarma and turned it into taco al pastor changing the flat bread for tortillas and the lamb beef for pork (with pineapple)
