Nice one, what do you intend on doing with it? Do you use it to make soups and things like that?
I basically use it as cooking oil.
This was made using a simple dry rendering.

I put fat trimmings in an airfryer at 180c to render the fat, strain, and simmer until all water evaporatedthen strain through a coffee filter.
How does it smell? I don't like tallow because it's too..beefy? Waxy? Prefer lard instead.🤔 But it was from grassfed highland that didn't have much good bones and such either🤔
This one is pretty beefy, I mainly use it for searing steak and frying stuff to go with beef so I don't mind it being beefy.

You can use wet rendering to filter out the smell using water and salt, but it takes a lot of time.

I also use lard when I don't want the beefy smell, or even palm or coconut oil when I really want it to be neutral.
