Meatball Vegetable Soup
1 lb ground meat
(I used turkey this time)
1 egg
1/2 cup crumbs or almond flour
1/2 tsp salt
Fresh black pepper
Poultry seasoning to taste
Mix & form balls, bake 15 mins @ 375 F
Meanwhile sauté carrots/onion/celery/garlic in your soup pot, add 8 cups broth, meatballs, parsley & rosemary, simmer 20 mins.
Optional: Add cooked rice (I used finely chopped cauliflower)
