 Tonight's Meal: Ava's Instant Pot Vegetarian Chili with Homemade Sweet-Heat Pickled Jalapeños and Hominy. So good! 😋

Ingredients:
- 2 onions
- 2 bell peppers (1 red + 1 yellow)
- 5-8 cloves garlic
- 2 cans black beans
- 2 cans pinto beans
- 2 cans white beans (navy or great northern)
- 2 cans whole kernel sweet corn
- 2 small cans (or 1 large) sliced mushrooms
- 2 cans hominy (white or yellow)
- 2 cans petite diced tomatoes

Instant Pot Instructions:
1. Set Instant Pot to SAUTÉ mode
2. Sauté onions, bell peppers + garlic in your preferred oil (coconut or avocado oil)
3. When veggies are almost done, add all canned ingredients
4. Season with chili powder + cumin to taste
5. Close lid, set to SOUP/BROTH mode for 20 minutes
6. Natural or quick release (either works)
7. (Optional) Top with shredded cheddar, crackers, and pickled sweet-heat jalapeños

 Looks delicious! 
 It is! The chili sauce is there. I just added less to this plate and added hominy on top as a garnish this time because it's more colorful that way.

Here is a pic with more sauce before adding hominy as a garnish (though I highly recommend just cooking it all together like I outlined in the recipe).
